Recipe: Blueberry Buckle

Chicken and Stuffing Casserole

Part of our dinner rotation for years, this Chicken and Stuffing Casserole is easy and yummy!

Ingredients:

2 chicken Breasts cooked and shredded
1/2 stick (1/4 cup) of butter or margarine melted
1 1/2 cups of hot water
1 10.5 oz can of cream of chicken soup
1/2 cup of sour cream
1 6 oz box of Great Value Chicken Flavored Stuffing Mix

Cheesy Hamburger and Macaroni Casserole

Cheesy Hamburger Mac

I found this recipe in a recipe book that my Mother in Law gave me from her church. It has been part of our dinner rotation ever since.

Ingredients:

Approx. 1 pound of ground beef
1 Large Green Pepper chopped (about 1 cup)
1 large onion chopped (about 2 cups)
16 oz of tomato sauce
1/4 tsp of black pepper
8 oz of Velveeta Shreds or 1/4 pound of Processed cheese cubed
1 1/2 cup of elbow macaroni (before cooking) prepared according to packaged directions

Broccoli Casserole (Very Easy and Delicious)

Broccoli Casserole

Delicious and Very Easy to prepare. We serve this at all holidays and it is a Big Hit. One of my personal favorite sides..

Ingredients:
2 10oz packages of frozen chopped broccoli
1 8oz package of Velveeta Shreds (2 cups) (can substitute 8oz of processed cheese food shredded)
1 stick of real butter (1/4 pound)

Yummy Szechwan Chicken

Don’t cook this without sharing with my mother. She will hunt you down!  This is her favorite.

Ingredients:

Approx. 1 pound of boneless skinless Chicken Breasts cut into bite sized pieces
3 Tbsp of cornstarch
1 1/2 Tbsp of  Vegetable Oil
1 large green pepper diced (about one cup)
1 large onion diced (about 2 cups)
1 Tbsp of minced garlic
1 tsp of ground red pepper
3 Tbsp of soy sauce
5 Tbsp of cooking sherry wine
1 Tbsp of sugar
